Hi Bill! How cool is that?? I will be so excited to hear about your adventures in making them! I will tell you a secret...I wanted to be a pastry chef when I was growing up and actually taught myself how to make most of the basics by the time I was 15 or 16! But I don't remember hearing about macarons until just a few years ago and none of my cookbooks mentioned them, so they are the one thing I don't know how to make. I'm so glad you have found a place near to you so that you could try them out. The last time my husband and I were in the Denver area visiting his family, we made a wonderful discovery that the Whole Foods there made them and they were very close to the ones we had had in Paris!
